What is garam masala?

Garam masala is an Indian blend of "warming" spices, usually including cinnamon, cardamom, clove, black pepper, cumin and coriander. The mix varies by region and brand. It is usually added at the end of cooking.

Is garam masala the same as curry powder?

No. Curry powder (Dutch kerrie) is a Western blend with plenty of turmeric, which makes it yellow. Garam masala usually has no turmeric, is brown and tastes warmer and sweeter. They are not straight swaps.

How do you use garam masala?

Stir half to one teaspoon into a curry or dal just before serving. That keeps the aroma; long cooking flattens the flavour.

Frequently asked questions

Can you make garam masala at home?
Yes: toast whole spices briefly in a dry pan and grind them. Homemade garam masala is most aromatic in the first weeks.
Is garam masala spicy hot?
Not really: its warmth comes from black pepper and clove, not chilli.
