Atta vs whole wheat flour: what is the difference for chapati?

Atta is Indian whole wheat flour milled very finely, traditionally between stones (chakki). That milling makes atta absorb more water and gives soft, pliable chapatis. Dutch volkoren tarwemeel is ground more coarsely for yeast bread; chapatis made with it turn out drier and firmer.

What is the difference between atta, whole wheat flour and white flour?

All three come from wheat, but they differ in which part of the grain they contain and how finely they are ground. That decides how much water the flour absorbs and how the dough behaves.

Why are chapatis made with atta softer?

Fine milling damages part of the starch in atta. Damaged starch absorbs extra water, which makes the dough moister and more pliable. The bran is also so fine that it barely tears the dough.

Can you replace atta with whole wheat flour?

Yes, with adjustments. Sift the coarsest bran out of the whole wheat flour or mix it half and half with white flour, add a little more water and rest the dough longer. It gets close, but not as soft as with atta.

What do MP atta and chakki atta mean?

Chakki atta is atta ground between stones, the traditional method. MP refers to Madhya Pradesh, the Indian state the wheat comes from. Both are descriptions on the pack, not a different kind of flour.
