Moong dal is split mung bean. In Dutch the bean is called mungboon, and taugé (bean sprouts) is sprouted mung bean. Yellow moong dal (husked) is easy to digest and cooks in 20 to 30 minutes.
What forms of moong are there?
Yellow moong dal is split and husked and cooks creamy. Moong chilka is split with the green skin and has more bite. Whole moong is the green mung bean you soak, cook or sprout.
What is moong dal used for?
Khichdi (rice with dal), a light dal tadka, soup and cheela (savoury pancakes of ground moong). Because it is easy to digest, moong dal is often eaten in India when someone is recovering.
